Crust
1/2 cup butter
1/4 cup powdered sugar
1 cup flour
Filling
2 tablespoons lemon juice
1 lemon, grated rind
2 eggs, beaten
1 cup sugar
1/2 teaspoon baking powder
2 tablespoons flour
Topping
powdered sugar
directions
For Crust: Mix all crust ingredients and press into 9" square pan. Bake for 15 minutes at 350 degrees F.
For Filling: Stir or sift together dry ingredients, add eggs and lemon. Mix well and pour on baked crust. Bake 25 minutes more.
Sprinkle with powdered sugar and cut into squares.

This truly is an easy, yummy lemon bar recipe. Most of the ingredients are very easy to find, or have on hand. Our family has made this 4 times in 2 weeks. A 8-12 year old child can easily make these with a parent near by. Easy, yummy, they will want more!
