Beer makes batters better, meat more tender, and sauces more flavorful.

1 1/2 cup flour
2/3 cup powdered sugar
3/4 cup butter or margarine, softened
3 eggs
1 1/2 cup sugar
3 tablespoons flour
1/4 cup lemon juice
1/3 cup powdered sugar (for decoration)
Heat the oven to 375 degrees F. Grease a 9" x 13" baking pan.
Combine the flour, 2/3 cup powdered sugar, and butter. Pat dough into prepared pan. Bake for 20 minutes, until slightly golden.
While the crust is baking, whisk together eggs, sugar, flour and lemon juice until frothy. Pour this lemon mixture over the hot crust.
Return to oven for an additional 20-25 minutes, or until light golden brown. Cool on a wire rack. Dust the top with powdered sugar. Cut into bars.

After 15 minutes my crust was beyond ready to come out, so maybe 20 minutes is a bit long but then again my oven is strange. Very good, foolproof user-friendly recipe, the only one I found that didn't require shredded coconut which I don't have right now; I did add a splash of malibu rum though.
