Banana Bars With Cinnamon Sugar Topping

ingredients
1 1/2 cup all-purpose flour
1 1/2 teaspoon baking powder
1/8 teaspoon salt
1/2 cup butter, softened
1 cup firmly packed light brown sugar
2 large bananas, peeled and mashed
1/2 teaspoon vanilla extract
1/2 cup finely chopped pecans

directions
Preheat the oven to 350 degrees F. Butter an 11 x 7-inch baking pan.
Sift the flour, baking powder, and salt into a medium bowl. Beat the butter, brown sugar, bananas, and vanilla in a large bowl with an electric mixer at high speed until well blended. Mix in the dry ingredients, followed by the pecans.
Pour the mixture into the prepared pan. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Sprinkle with the cinnamon sugar. Cool completely before cutting into bars.

I work at a women's shelter and made up a triple batch of these substituting whole wheat flour and a bit less sugar - they were gone in no time!

Very moist and the pecans give it a great flavor. My husband and I really enjoyed them.

The bars did not rise like normal banana bars, but they were still good. I used a different frosting though.
