Bar Modesto's Stir Fried Mushrooms And Shrimp

ingredients
3 tablespoons olive oil
1/2 green bell pepper, cut 1/2" strips
1/2 pound medium shrimp, shelled
1/2 pound fresh mushrooms
3 cloves garlic, minced
1/4 pound cured ham, cut in 1/2" cubes
1/4 teaspoon crushed red pepper flakes
salt and freshly ground pepper, to taste
3 tablespoons dry (fino) Spanish sherry
3 tablespoons chicken broth
directions
Wash mushrooms, then cut in 1/4-inch lengthwise slices with stems; set aside.
Heat 2 tablespoons of the oil in a large skillet, preferably nonstick. Stir-fry the green pepper over medium-high heat for 1 minutes, then add the shrimp and stir-fry 1 minute more.
Add the mushrooms, garlic, ham, crushed red pepper, salt, pepper and the remaining tablespoon of oil. Cook, stirring, until the mushrooms are softened. Add the sherry and broth, stir to deglaze pan, and serve immediately.
