Even if you don't celebrate Passover, this apple dessert is a perfect for friends and family. The "crisp" is made with matzo meal instead of oats or flour.
5 medium granny smith apples
1/2 cup sugar
1 teaspoon ground cinnamon
2 teaspoons lemon juice
1/2 cup unsalted matzo meal
1/3 cup sugar
1/4 cup sliced almonds
2 tablespoons melted margarine
1/8 teaspoon salt
Preheat the oven to 350 degrees F. Grease an 11x7 baking dish.
Peel, core, and thinly slice the apples. Place the apples in a bowl and toss with the sugar, cinnamon, and lemon juice. Mix until the apples are evenly coated.
Transfer the apples to the baking dish.
In another bowl, combine the matzo meal, sugar, sliced almonds, margarine, and salt. Mix well. Sprinkle the matzo mixture evenly over the apples.
Place the baking dish in the oven and bake at 350 degrees F for 1 hour or until lightly browned on top. Serve warm.
Refrigerate leftovers.
