Got a plan for those turkey leftovers? Try this easy no-fuss casserole recipe that can use up turkey, veggies, and stuffing all in one recipe.
2 cups cut up leftover turkey
1 cup cut up veggies, leftover or frozen mixed
1 can (10.75 ounce size) cream of chicken soup
3 cups leftover cooked stuffing, or prepare from a mix
Preheat the oven to 350 degrees F. Lightly grease a pie plate or 8x8 baking dish.
Layer the cut up turkey in the bottom of the dish. Top evenly with the vegetables.
Spread a layer of the soup over the top, smoothing it so it's even.
Spread the stuffing over everything, covering the soup completely if possible.
Place the dish in the oven and bake at 350 degrees F for 30 minutes or until bubbly in the middle. Serve the leftover turkey casserole hot.

The stuffing really made this recipe good, if you're not already burned out on stuffing after thanksgiving. Next time I make this, I will dice the turkey into smaller cubes and let my frozen veggies thaw to room temp before using. Good use for the leftovers though.
