Passover Apple Cake

ingredients
1 1/2 cup Granny Smith apple, peeled & chopped
1 teaspoon fresh lemon juice
1/2 cup granular sugar substitute, PLUS"PLUS" means this ingredient in addition to the one on the next line, often with divided uses
2 teaspoons granular sugar substitute
1/3 cup unsweetened applesauce
1/4 cup egg substitute
2 tablespoons vegetable oil
1 1/2 cup matzo cake meal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup walnuts, chopped
non-stick cooking spray
directions
Chop apples. Mix apples with remaining ingredients. Spray 8" x 8" x 2" square pan with cooking spray. Pour in batter.
Bake at 350 degrees F for 40 minutes or until toothpick inserted in center of cake comes out dry. Cool in pan for 20 minutes. Remove from pan and continue to cool on a wire rack. Cut into squares.
NOTE: Here is a low-sugar, low-fat moist cake that is always a crowd pleaser. Look for matzo cake meal. If you can't find it, put regular matzo meal in a food processor and blend until it resembles flour.

This ended up being a tasty cake, but I had to add another 1/3 c. (at least) of applesauce and a cup of water. And, it only yielded a regular loaf pan and a mini loaf pan worth of dough - it tasted like apple bread pudding.
