ingredients
1/2 pound smoked bluefish
1/2 cup finely chopped celery
2 tablespoons chopped red onion
1 tablespoon coarsely chopped capers, optional
2 tablespoons chopped fresh Italian parsley
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2 tablespoons mayonnaise, or more to taste
black pepper, to taste
directions
If necessary, remove the skin and bones from the bluefish. With your hands, pull it apart into large flakes. Transfer to a bowl.
Add the celery, onion, capers (if using), parsley, vinegar, lemon juice, mayonnaise, and pepper. Fold gently, taste for seasoning, and add more mayonnaise or black pepper, if you like.
