ingredients
1 pound imitation crab
1/4 cup chopped onions
1/4 cup chopped celery
1/4 cup chopped black olives
1 can (8 ounce size) peas, drained
3/4 cup shredded cheddar cheese
mayonnaise, as needed
salt and pepper, to taste
directions
Cube or flake the imitation crab and combine with the onions, celery, olives, peas, and cheese. Mix gently.
Stir in mayonnaise until the desired consistency is achieved. Season to taste with salt and pepper and serve immediately, or chill for up to 3 hours before serving.

The vegetables make this a very refreshing salad, especially if refrigerated until they're nice and cold (the whole salad, that is). Cut the fish into fairly large chunks so that it doesn't shred and you can spear it with your fork when eating.
