Peanut Butter Breakfast Squares

ingredients
1 large egg white
1 1/4 cup old fashioned rolled oats
1/4 cup honey
1/4 cup oat bran
1/4 cup natural creamy peanut butter
1/4 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup raisins
directions
Preheat oven to 350 degrees F. Coat an 8 inch square pan with nonstick cooking spray.
Beat the egg white, honey, peanut butter and vanilla with an electric mixer until smooth. Add the oats, bran, and cinnamon and beat until well mixed. Stir the raisins into the batter.
Spread the batter in the pan. Bake for about 20 minutes or until a toothpick inserted in the center comes out clean. Cool in pan and then cut into squares. Store in refrigerator.

This turned out a little dry for me but tasted really good. Maybe more peanut butter? Or a whole egg? Not sure how to change it but I'd like to make it again.
