Blackberry Breakfast Bars

ingredients
Filling
2 cups fresh or frozen blackberries or raspberries
2 tablespoons sugar
2 tablespoons water
1 tablespoon lemon juice
1/2 teaspoon ground cinnamon
Base
1 cup flour
1 cup quick-cooking rolled oats
2/3 cup brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
1/2 cup margarine or butter, melted
directions
For Filling: In a medium saucepan combine berries, sugar, water, lemon juice and cinnamon. Bring to a boil. Reduce heat. Simmer, uncovered, for about 8 minutes or till slightly thickened, stirring frequently. Remove from heat.
For Base: In a mixing bowl stir together flour, oats, brown sugar, cinnamon, and baking soda. Stir in melted margarine or butter till thoroughly combined. Set aside 1 cup of the oat mixture for topping. Press remaining oat mixture into an ungreased 9x9 pan. Bake at 350 degrees F for 20 to 25 minutes.
Carefully spread filling on top of baked crust. Sprinkle with reserved oat mixture. Lightly press oat mixture into filling. Bake for 20 to 25 minutes more or till topping is set. Cool in pan on a wire rack. Cut into bars.

I have made this recipe many, many times. Everyone loves them. I have requests for them. I had always followed the recipe exactly with the exception of adding some corn starch to the berry filling. Last wkend I had 3cups of berries so I increased all the other ingredients proportionately. I cut them into about 1" squares. Always a hit. Word has spread of how good these are, they are now what everyone wants me to bring to social gatherings. The difficulty rating is a 3 but I would put it more of maybe a 2 and only an hour to make, start to finish. Try & ENJOY!

I was trying to make a quick and easy bar for breakfast, when I came across this recipe on the Internet. It wasn't really quick, but I had all the ingredients necessary to make it, so I thought, "What the heck? I'll give it a try!" The directions were relatively easy to follow. In adding the lemon juice of the filling, I accidentally added 1 tablespoon too many; however, the end result was delicious! I am a baker who sells my products to several businesses around the area, and I'm definitely going to be selling this bar! The only thing I can say to anyone that's planning to make this recipe is to grease the pan. I made the mistake of following the recipe and putting the bar in an ungreased pan, and it didn't come out as I'd like. My recommendation (as a baker) is to grease the pan, then put a baking sheet in, to ensure it comes out correctly!
