ingredients
1 package (3 ounce size) lime gelatin powder
1 cup boiling water
4 tablespoons sugar
1 can (20 ounce size) crushed pineapple and juice
1 package (3 ounce size) cream cheese, softened
1 container (8 ounce size) Cool Whip
directions
Let cream cheese set in mixer bowl until soft. Dissolve gelatin and sugar in hot boiling water (add some green food coloring, if desired).
Add slowly, while beating, to the beaten cream cheese, the pineapple and juice. Chill just until starts to gel.
Fold in Cool Whip (which has been beaten smooth with a spoon.) Refrigerate overnight.
