Ever find yourself craving something a little quirky and delicious? Lime Jello marshmallow cottage cheese surprise might be the colorful dish you didn't know you needed at your next get-together.

1 package (3 ounce size) lime gelatin powder
1 cup boiling water
1 can (20 ounce size) crushed pineapple, undrained
1 cup cottage cheese
1/2 cup whipped cream or cool whip
1 jar (6 ounce size) maraschino cherries, drained
1/4 cup chopped pecans, optional
1 cup miniature marshmallows
Place the gelatin in a bowl, add the boiling water and stir until dissolved, 1 to 2 minutes. Drain the pineapple, reserving 1/2 cup of the syrup. Add that syrup to the gelatin. Chill until thickened but not set, about 1 hour.
Fold in the pineapple, cottage cheese, whipped cream, cherries, pecans and marshmallows. Pour into a 5-cup mold. Chill until set, at least 4 hours. Unmold onto a plate.

I luv this recipe. I have made it so many times and my husband and his family have raved over it every time. Try it and your goona love it. I really like the marshmellows and marashino cheeries... love that color red!
