ingredients

1 small package sugar-free lime-flavored Jello
2 cups boiling water
2 cups cold water
2 tablespoons low-calorie mayonnaise
1 cup low-fat cottage cheese
1 can (8 ounce size) crushed pineapple in water, drained
non-stick cooking spray
lettuce leaves (optional)

directions

Dissolve Jell-o in boiling water in a medium bowl, stirring well. Stir in cold water. Chill until mixture is the consistency of unbeaten egg white.

Fold low-calorie mayonnaise substitute into Jello mixture. Add cottage cheese and pineapple, stirring well. Pour gelatin mixture into a 6-cup mold coated with cooking spray.

Chill Jell-o mixture until firm. Unmold salad into lettuce leaves, if desired.
