Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.
Circus Peanut Salad

ingredients
2 packages (4 serving size) orange gelatin mix
3 cups boiling hot water
1 can (20 ounce size) crushed pineapple, drained well
1 container (8 ounce size) frozen whipped topping, thawed
20 circus peanut candies
directions
Drain the crushed pineapple well and put it in the refrigerator. Next, slightly tear the circus peanuts up so they melt easier and then set aside.
In a bowl, mix the boiling water and add the circus peanuts and the orange gelatin. Stir until the peanuts and gelatin are completely dissolved. Slightly cool (Don't allow to set completely though!).
Add to the gelatin the drained crushed pineapple that's chilling in the refrigerator and the container of whipped topping and mix well.
Pour into a 9 x 13 inch pan and place in refrigerator to finish setting. Keep refrigerated.
You can add extra whipped topping to the top of the gelatin along with extra circus peanuts to garnish.
