Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

1 medium yellow onion, sliced

2 packages (16 ounce size) bratwurst, white colored ones work best
2 tablespoons flour

directions
Heat oil and garlic in a large saucepan. Add onion, black pepper, and red pepper to pan. Saute until soft and golden. Add bratwurst to pan and brown. Remove bratwurst from pan.
Add flour to pan and stir to absorb oil. Slowly add beer to pan and stir well. Return bratwurst to pan. Cover and simmer for 30 minutes, stirring occasionally.
Slowly stir in sour cream. Make sure to gradually add sour cream so that it does not curdle. Heat through. Serve over hot buttered noodles.
