ingredients
1/2 cup slivered almonds
1 cup celery, sliced
2 cups cooked chicken, cubed
1/4 cup pimiento, chopped
3/4 cup light mayonnaise
1 tablespoon honey
1 tablespoon lemon juice
1 teaspoon salt (optional)
For garnish
watercress
halved seedless grapes
pineapple chunks
lettuce leaves
directions
Combine slivered almonds with celery, chicken and pimiento. Blend mayonnaise, honey, lemon juice and salt and toss with chicken mixture. Chill until ready to serve.
Arrange in salad bowl and garnish with watercress and halved, seeded grapes or pineapple chunks, if desired. Serve on lettuce leaves.
