1 pound hot bulk pork sausage
1 small onion, chopped
1 small green bell pepper, seeded and chopped
1 1/2 stalks celery, chopped
1 envelope (1.15 ounce size) instant chicken noodle soup mix
1 cup uncooked long-grain rice

Preheat the oven to 350 degrees F. Grease a 12x8 baking dish.
Heat a Dutch oven or large saucepan over medium-high heat. Add the sausage and cook, stirring frequently, until the sausage is cooked. Drain off any excess grease.
Add the onion, bell pepper, celery, soup mix, rice, and water. Stir well and bring to a boil. Turn off the heat and carefully pour the mixture into the baking dish.
Cover the dish with foil and place in the oven. Bake at 350 degrees F for 1 hour or until the rice has absorbed all the liquid.

Great- started cooking this 3 or 4 years ago. Family insists I cook this every Christmas and thanksgiving. And we are cornbread dressing people in AR. I am making a triple recipe tomorrow (thanksgiving).
