Rice Au Gratin Supreme

ingredients
4 cups cooked rice
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/4 cup chopped pimentos
1 can (10.75 ounce size) cream of mushroom soup
1/3 cup mayonnaise
2 cups grated cheddar cheese
1/2 cup milk
1 teaspoon salt
1/4 teaspoon pepper
directions
Combine rice, onion, green pepper and pimentos. Blend soup, mayonnaise, half the cheese, milk and seasonings. Stir into rice mixture.
Turn into a buttered 2 qt casserole. Sprinkle with remaining cheese. Bake at 350 degrees F for 25 minutes or until hot and bubbly.
