Corn And Tomato Casserole

ingredients
1 medium onion, chopped
1 green bell pepper, chopped
1/2 cup margarine
2 cups cooked rice
2 cups whole-kernel or shoepeg corn
2 cups drained canned diced tomatoes
salt and pepper, to taste
1 cup shredded Cheddar cheese
directions
Preheat the oven to 375 degrees F. Grease a 2 1/2 quart baking dish.
Heat a skillet over medium-high heat. Add the onion, bell pepper, and margarine. Saute until the onion and bell pepper are tender.
Stir in the rice, corn, tomatoes, salt, and pepper. Mix well. Pour the mixture into the prepared baking dish and top with the shredded cheese.
Bake, uncovered, at 375 degrees F for 30 minutes or until the casserole is heated through and the cheese is melted.
Serve hot.
