ingredients
1/2 cup mayonnaise
1/3 cup cranberries, fresh or frozen, chopped
2 tablespoons pecans, finely chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
16 slices bread with crust removed
16 cooked chicken slices, thin (deli meat)
8 lettuce leaves
Chive Butter (Optional)
1/2 cup softened butter or margarine
1/2 teaspoon lemon juice
1/8 teaspoon black pepper
2 tablespoons minced chives
directions
Combine the first five ingredients; spread on one side of each slice of bread. Layer half the bread slices with chicken and lettuce. Top with remaining bread. Cut into quarters or decorative shapes.
Note: Chive butter may be used in place of the cranberry mayonnaise.
For Chive Butter: Beat softened butter or margarine, lemon juice and pepper until fluffy. Stir in chives.
