Slow Cooker Alfredo Green Bean Casserole

ingredients
1 bag (28 ounce size) frozen cut green beans
1 can (8 ounce size) sliced water chestnuts, drained
1/2 cup roasted red bell pepper strips from a jar
1 container (10 ounce size) Alfredo pasta sauce
1 can (2.8 ounce size) French fried onions
directions
In a 6 qt. crock-pot, mix all ingredients except onions. Stir in half of the onions.
Cover and cook on high 3 to 4 hours, stirring after 1 to 1-1/2 hours.
About 5 minutes before serving, in an 8" skillet, heat remaining half of the onions over medium-high heat 2 to 3 minutes, stirring frequently, until hot. Stir bean mixture, sprinkle with warm onions.

Loved two things about this recipe: 1) it's made in the crock pot which in the summer is a must in my non-air conditioned house and 2) that it didn't call for cream of mushroom soup. It still calls for a jarred sauce but I can get much better quality alfredo sauce than you get with the soup that tastes amazing. I'd also never toasted the french fried onions before adding to a recipe butI suppose I usually use them in an oven recipe so this gave it really good "traditional" texture. I would recommend this green bean dish if you are looking for something that everyone would love with very little work especially for the holidays. I've already saved it to my recipebox in my thanksgiving folder!
