ingredients
2 cups sugar
1 cup buttermilk
1/4 cup water
1 tablespoon instant coffee powder
1 teaspoon baking powder
1/8 teaspoon salt
2 cups chopped pecans
2 tablespoons butter, softened
2 teaspoons vanilla extract
directions
Combine the sugar, buttermilk, water, coffee granules, baking powder and salt in a large Dutch oven. Bring to a boil, stirring constantly.
Cook over medium heat, stirring constantly until mixture reaches the soft ball stage (236 degrees F). Remove from heat and stir in pecans, butter and vanilla extract. Beat vigorously with a wooden spoon until mixture just begins to thicken.
Working rapidly, drop by rounded tablespoons onto greased waxed paper. Let cool.
