It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).

You can double-up the chocolate in these brownies with the optional addition of chocolate chips. Not that they lack any chocolate flavor with the Dutch process cocoa as the base. Is there such a thing as too much chocolate? We don't think so.
1 cup unsalted butter
2 1/4 cups sugar
1 1/4 cup Dutch process cocoa
1 teaspoon salt
1 teaspoon baking powder
1 tablespoon vanilla extract
4 large eggs
1 1/2 cup all-purpose flour
1 cup milk chocolate chips optional
1 cup chopped walnuts or pecans optional
In a medium microwave-safe bowl or in a saucepan over low heat, melt the butter, then add the sugar and stir to combine. Return the mixture to the heat (or microwave) briefly, just until it's hot (about 110-120 degrees F) but not bubbling; it'll become shiny looking as you stir it.
Stir in the cocoa, salt, baking powder, and vanilla. Whisk in the eggs one at a time, stirring until smooth after each addition, then add the flour, chips and nuts. Again stirring until smooth. Spoon the batter into a lightly greased 9x13 pan. Bake in a preheated 350 degree F oven for 28-30 minutes.

Tried it. Way, way too much coco powder. You could probably use half the amount of coco powder and it'd be better. I had to use milk to be able to make a batter

Made these even more chocolatey by putting a rich chocolate ganache type frosting on them! AMAZING!!! The dutch cocoa is very important so don't sub it in this recipe. YUM!

These brownies were awesome! I made a double batch & topped one batch with white chocolate chips & the other with peanut butter chips. I also used them as part of my chocolate cherry trifle & they were a huge hit!

Wonderful brownies! Even my anti-chocolate husband couldn't get enough of them!
