Feel like getting a little boozy with your dessert? These Jamaican jigglers combine zesty flavors and a splash of rum for a treat that's seriously easy to whip up.
1 package (4 serving size) lime gelatin
1 package (4 serving size) lemon gelatin
1 cup boiling water
1/2 cup light rum
Grease a 9x13 baking dish but wipe away any excess.
Combine the gelatins in a heat safe bowl and slowly stir in the boiling water. Mix until the gelatin has dissolved (about 2 minutes). Let the mixture cool almost to room temperature.
Stir the rum into the gelatin mixture. Gently pour the liquid into the prepared pan. Place the pan in the refrigerator until set, about 3-4 hours.
When ready to serve, cut the jigglers into squares.
If the jigglers are difficult to remove from the pan, set the bottom of the pan in a sink with just enough hot water to come up about 1/4 inch. This will help loosen the jigglers from the pan. Do not leave the pan in the water for long or the jigglers may start to melt.
