A spiced almond crumb crust is topped with a layer of fruit jam and a crumbly topping.
1 1/2 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon baking powder
1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1 large egg yolk
3/4 cup sliced almonds
1/2 cup fruit jam, such as cherry, plum or raspberry
Preheat the oven to 350 degrees F. Grease an 8-inch square baking dish.
In a bowl, stir together the flour, cinnamon, salt, and baking powder.
Add the butter, brown sugar, and white sugar to a large mixing bowl. Beat on medium-high speed with an electric mixer until light and fluffy. With the mixer running, add the egg yolk and beat until combined.
With the mixer running on low speed, slowly add the flour mixture to the butter mixture, scraping down the sides as needed. Stir in the almonds by hand.
Place the jam in a small bowl and microwave on 50% power for 30 seconds, stirring halfway through the cooking time. Stir the jam with a fork until it is fairly smooth.
Place half of the dough mixture into the bottom of the greased baking dish and press to form a crust. Spread the jam over the dough leaving a 1/4-inch border. Sprinkle the remaining crust over the top of the jam.
Place the baking dish in the oven and bake at 350 degrees F for 25-30 minutes or until the top is golden brown.
Remove the pan from the oven and cool completely before cutting into bars. Store in an airtight container.
