Whole Wheat Carrot Date Bars

ingredients
1 cup whole wheat pastry flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs, lightly beaten
1/2 cup honey
1 teaspoon vanilla extract
1 cup chopped dates
1 cup peeled and shredded carrots
1/2 cup chopped walnuts
directions
Preheat the oven to 350 degrees F. Grease a small baking pan.
In a bowl, combine the flour, baking powder, and salt.
In another bowl, beat together the eggs, honey, and vanilla until smooth.
While stirring, add the egg mixture to the flour mixture and continue to stir until well blended.
Stir in the dates, carrots, and walnuts.
Pour the batter into the prepared baking pan. Place in the oven and bake at 350 degrees F for 30 minutes or until baked in the center.
Remove the pan from the oven and place on a cooling rack. Cool completely then cut into bars.
