It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Cranberry Jello Salad

ingredients
1 1/4 cup boiling water
1 package (3 ounce size) strawberry gelatin powder
1 can (16 ounce size) jellied cranberry sauce
2 apples, unpeeled and chopped
1 can (11 ounce size) mandarin oranges, drained
1/2 cup chopped walnuts
directions
Combine the boiling water and gelatin powder in a bowl and mix well to dissolve the gelatin.
Stir the cranberry sauce with a fork then add to the gelatin mixture. Pour into a decorative serving bowl and refrigerate until partially set.
When the gelatin is partially set, add the apples, mandarin oranges, and walnuts. Mix gently then return to the refrigerator and chill until fully jelled.
Serve cold.

Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

Thank you for this recipe - I've made it now for about five years - the cranberry dish to serve with turkey! Everyone loves it!!!
