Spicy Honey Walnut Chicken

ingredients
3 boneless, skinless chicken breast halves
4 small potatoes
1 white onion
2 cloves garlic
2 tablespoons olive oil
1/2 stick butter
1 cup honey
2 tablespoons minced jalapenos with juice
2 cups bread crumbs
1 tablespoon onion salt
1 tablespoon garlic powder
1 tablespoon black pepper
1 small package walnuts
directions
First crush all the walnuts to a fine texture (leaving some pieces slightly larger for added taste). Add walnuts, onion salt, garlic powder, and pepper to the bread crumbs. Set aside.
Cut potatoes in 1/2-inch thickness and add to boiling water, cooking for 10 to 15 minutes.
Cut the white onion in quarters and peel the layers apart, lining a large casserole dish with them. Remove potatoes from water and cover all the onions with the potatoes.
Mince garlic cloves and sprinkle across the top of the potatoes. Drizzle potatoes with honey and olive oil. Sprinkle a little bread crumbs across potatoes if desired.
Pour honey in a dish and add jalapenos (sometimes it helps to warm the mixture in the oven for about 15 seconds so they will blend easier). Cut chicken in equal size portions and roll in honey mixture and then the bread crumb mixture.
Place chicken in dish with onions and potatoes. Cut butter into small pieces and place around the dish. Cook at 425 degrees F for about 45 minutes (or until potatoes are browned).
