ingredients
1 pound extra lean ground beef
1/2 onion, chopped
1 can cheddar cheese soup
1 teaspoon prepared mustard
2 cups frozen corn (can use canned)
1/2 teaspoon salt
1/8 teaspoon black pepper
1 cup shredded Co-Jack cheese
4 cups Tater Tots
directions
Preheat oven to 400 degrees F. Spray 8"x8" square pan with Pam.
In skillet, cook ground beef and onion over medium heat until meat is no longer pink; drain well. Return to skillet.
Add corn, soup, cheese, mustard, salt and black pepper. Mix completely.
Spoon beef mixture into square pan. Top evenly with Tater Tots. Bake 35-40 minutes until hot and bubbly.

I omitted the mustard and corn but made it as directed otherwise. I liked that this was a cheesy version of tater tot casserole because I don't like cream of mushroom soup. I also partially cooked the tater tots on a baking sheet before putting them on the casserole. I find that the bottom side doesn't get as soggy that way.
