ingredients
1 pound ground beef
3/4 cup chopped onion
1 can (16 ounce size) chopped tomatoes
1 can (15 ounce size) red kidney beans
1 cup quick-cooking rice
1 cup water
3 tablespoons chopped green bell pepper
1/2 teaspoon chili powder
2 teaspoons garlic salt
3/4 cup shredded cheddar cheese
corn chips, crushed
directions
Cook ground beef and onion till meat is browned and onion is tender. Drain off fat.
Stir in the undrained tomatoes, undrained beans, rice, water, green pepper, chili powder, and garlic salt. Reduce heat and simmer, covered, for 20 minutes, stirring occasionally.
Top with cheese. Cover and heat 3 minutes or till cheese melts. Sprinkle corn chips around edge.
