1/2 pound lean ground beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 can (15 ounce size) black beans, drained
1 cup salsa (heat level as desired)
2 tablespoons chopped jalapeno peppers
1 box (8.5 ounce size) corn muffin mix
2 cups shredded sharp cheddar cheese, divided
1/4 cup milk
1 egg
ripe olives, if desired
additional salsa, if desired
sour cream, if desired

directions

Heat oven to 375F. Grease 9-inch glass pie plate.

In a 10-inch skillet, cook the ground beef, onion and green pepper until beef is no longer pink. Stir in the beans, salsa and chopped jalapeno peppers, set aside.

In medium bowl, combine corn muffin mix, half the shredded cheese, milk and egg. Stir just until moistened. Press mixture on bottom and up sides of greased 9-inch pie plate. Spoon beef mixture into crust.

Bake 20 to 30 minutes or until set. Remove from oven, sprinkle with remaining 1 cup shredded cheese. Bake 2 to 5 minutes or until cheese is melted. Let stand 5 minutes. Cut into wedges. Serve with olives, salsa and sour cream, if desired.

    This is a good Recipe, I just like to add to them a little. half a cup of corn, sprinkle of taco seasoning, yellow and orange bell peppers and freah jalapeno. salt and pepper to taste. cook on center rack with a cookie sheet underneath so as not to burn the bottom of your dish.

    I measured all the ingredients exactly and the cornbread mix rose so much that the filling boiled over onto the floor of the oven. I used Jiffy brand, maybe another brand might yield the desired result. I would recommend using a much larger baking dish the first time you make this!

    I found this recipe after I lost my original recipe for tamale pie. I will never go back. This recipe is soooo yummy. The cornbread adds a whole new twist.
