ingredients

1 1/2 pound ground beef
1 medium onion
2 cups stewed tomatoes
1 small can tomato sauce
2 cups whole kernel corn
1 cup sliced ripe olives
1 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chili powder
1 clove garlic, minced
1/4 cup green bell pepper, chopped

Topping

1 1/2 cup milk
1/2 cup cornmeal
2 tablespoons butter
1 teaspoon salt
2 eggs, lightly beaten
1 cup shredded cheese

directions

Brown hamburger and onion. Add tomatoes, sauce, corn, olives, green pepper and seasonings and cook for about 20 minutes. Pour into well greased 8 x 12 inch baking dish or large casserole.

For Topping: Mix the milk, cornmeal, butter and salt; cook until thick. Add the eggs and cheese mix well and pour over meat mixture. Bake until top is browned at 350 degrees F, about 45 minutes to 1 hour.

    I doubled this recipe and made a few changes. I eliminated a cup of corn and added 1 can of black beans. I also added one can of chopped green chiles with the green pepper. In our family, if we like a new recipe, we say its a "Keeper" we voted this one a keeper.

    This is a keeper. I added a can of green chilis and 1 tsp of menudo Mexican spice mix. People asked for the recipe. Will definitely make again.

    Three different Tamale Pie recipes were cooked this evening and this was the best. In addition to great flavors in the meat mixture, the cornbread topping (with egg and cheese in it) was wonderful. Nice presentation on a bed of greens. Changes = shredded pork was used instead of hamburger along with fresh Cilantro, fresh Oregano, and pressed garlic clove. Salt was omitted and not missed because other ingredients (cheese, canned goods) have an abundance of salt.
