ingredients
1 package (6 ounce size) curly egg noodles
1 package (6 ounce size) spinach noodles
1 small onion, chopped
1 stalk celery, chopped
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon cayenne pepper
1/8 teaspoon paprika
2 cups skim or 1% low fat milk, divided
1 teaspoon cornstarch
1 tablespoon tub margarine
1 egg, beaten
2 egg whites, beaten
OR
1/4 cup egg substitute
2 tablespoons lemon juice
1/2 cup Parmesan cheese
1/4 cup dried parsley
1/8 cup dried basil
8 ounces lump crab meat
directions
Cook packages of noodles according to the package directions, drain and set aside.
Saute the onion and celery in olive oil for 5 minutes. Add the garlic, salt, pepper and paprika and cook 3 or 4 minutes more, set aside.
Slowly stir 1/2 cup of the milk into the cornstarch until smooth. Place in a saucepan, add the margarine, remaining milk, eggs, and lemon juice. Cook over low heat. Stir until it thickens.
Add the Parmesan cheese, parsley, basil, onions, celery, crab meat and cooked noodles. Toss together until noodles are coated with sauce and warmed thoroughly.

I would love to have given this recipe a 4 or 5, because it's very good, and pretty easy to make. However, I followed the recipe exactly, and found 2 problems: 1) way too many noodles for the amount of sauce; 2) the lemon juice curdled the milk/egg mixture. I recommend using 1/2 the amount of noodles shown, and omit the lemon juice, or perhaps add it to the noodles before tossing with the sauce. Excellent recipe in terms of flavor and ease of preparation, good work kelly 123.
