This brown sugar hot cocoa is the perfect drink for a cold winter day. It is rich and chocolatey, with just the right amount of sweetness.

3 ounces unsweetened chocolate
1/3 cup water
3/4 cup brown sugar, packed
1/8 teaspoon salt
4 cups hot milk
Combine the chocolate and water in the top of a double boiler over simmering, not boiling, water. Cook, stirring constantly, until the chocolate is melted.
Add the brown sugar and salt and mix until well combined. While stirring, slowly add the milk. Cook, stirring constantly, until the cocoa is smooth.
Serve the brown sugar hot cocoa immediately in heat-proof mugs.
