Homemade Marinara Sauce

ingredients
2/3 cup olive oil
2 onions, minced
4 cloves garlic, peeled and minced
3 cans (28 ounce size) whole peeled Italian plum tomatoes, crushed
1 1/2 tablespoon dried oregano
2 tablespoons dried basil
1 pinch sugar
salt and pepper, to taste
directions
Place olive oil in large pot but do not place on the heat yet. Add the minced garlic to the oil and just let it sit for a few minutes to infuse the oil with the garlic flavor.
After a few minutes turn on medium heat and cook garlic until little bubbles for around garlic pieces. When you see the bubbles add the onion and cook until translucent.
Pour in tomatoes (crush these or chop them before you add them) and stir to combine. Add oregano, basil, sugar, salt and pepper and mix well. Bring to a simmer and cook for 25-30 minutes. Remove from heat and allow sauce to cool for 15 minutes.
If you don't want chunky sauce, pass the sauce through a food mill or puree in batches in a food processor. Be careful so that you don't get burned by the hot sauce. Return to pot and serve hot.
