Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

- #58792
A simple ambrosia dish featuring pineapple, mandarin oranges, grapes, coconut, marshmallows, and pecans, all mixed with creamy vanilla yogurt for a light and refreshing treat.
ingredients
1 can (20 ounce size) pineapple chunks, well drained
1 can (11 ounce size) mandarin oranges, well drained
1 1/2 cup seedless green grapes
1 cup flaked coconut
1 cup miniature marshmallows
1/2 cup chopped pecans
1 tablespoon sugar
3/4 cup vanilla yogurt
directions
Combine the pineapple chunks, mandarin oranges, grapes, coconut, marshmallows, and pecans in a large bowl. Sprinkle with the sugar.
Fold the yogurt into the fruit and mix until all the fruit is coated and well mixed.
Serve the ambrosia immediately or cover and chill for 3-4 hours. Stir gently before serving.
recipe tips
Chill the ambrosia for a few hours to allow the flavors to meld together, but avoid chilling too long to prevent the salad from becoming watery and the nuts and marshmallows from getting mushy.
Use low- or non-fat yogurt and a sugar substitute to reduce calories.
Try different nuts for a unique twist; walnuts or hazelnuts can also work well.
For an extra creamy texture, fold in a dollop of whipped cream or whipped topping in addition to the yogurt.
Add a dash of vanilla extract to boost the vanilla flavor.
Keep portions small as this dish can be quite sweet.
For a tropical twist, add chopped fresh mango or diced kiwi.
Make it a fun individual layered dessert by layering the fruit and other ingredients with dollops of yogurt between in clear parfait bowls.
common recipe questions
What other canned fruits can I use in place of pineapple or mandarin oranges in this recipe?
You can substitute fruits like peaches, fruit cocktail, or cherries for the pineapple or mandarin oranges in this recipe. Just make sure to drain the fruit well to avoid excess moisture, which could affect the overall texture of the ambrosia.
Can I use regular yogurt instead of vanilla yogurt?
You can use plain yogurt or any other flavored yogurt. If using plain, consider adding a bit of vanilla extract or sweetener to mimic the flavor of vanilla yogurt.
Can I prepare ambrosia in advance?
Yes, ambrosia can be prepared several hours ahead of time. Preparing it too far in advance can make it become too watery.
Can I freeze ambrosia?
Freezing is not recommended, as the fruit can become mushy and the texture of the yogurt changes when thawed.
What if I am allergic to nuts?
You can simply omit the pecans or add something else crunchy like nut-free granola.
What other nuts can I use?
In place of pecans you can use walnuts, hazelnuts, or almonds. The different nuts will alter the flavor and texture slightly.
Can I leave out the coconut? I don't like the texture of it.
You can omit the coconut. If it's just the texture you don't care for but want a little coconut flavor, add a splash of coconut extract to the yogurt when mixing.
Can I use fresh pineapple and oranges in place of canned?
You can use fresh instead of canned; just make sure to chop them into similar sizes as the canned fruit and make sure they are well-drained to avoid excess moisture.
tools needed
Large Mixing Bowl: For combining all the ingredients, such as pineapple chunks, mandarin oranges, grapes, coconut, marshmallows, pecans, sugar, and vanilla yogurt.
Measuring Cups and Spoons: For measuring the grapes, coconut, marshmallows, pecans, sugar, and yogurt.
Spatula or Large Spoon: For gently folding the ingredients together to allow for even distribution without crushing the fruit.
Serving Bowl or Individual Cups: To serve the ambrosia once it is mixed if you prefer a decorative bowl instead of what you mixed it in. Individual cups can also be a nice presentation for serving.
Plastic Wrap or Lid: If chilling the ambrosia, plastic wrap or a lid is needed to cover the bowl before placing it in the refrigerator.
what goes with it?
Tropical Parfait: Layer ambrosia in a glass with granola and additional fruit to create a parfait. The crunch from the granola adds texture and complements the creaminess of the yogurt.
Grilled Chicken: Serve alongside grilled chicken for a balanced meal. The tropical flavors of the ambrosia pair well with the smokiness of the grilled meat.
Pork Tenderloin: Pair with a roasted pork tenderloin. The sweetness of the ambrosia serves as a perfect contrast to the savory and slightly tangy flavors of the pork.
Cheesecake: Serve ambrosia as a topping for a simple no-bake cheesecake. The creamy texture and fruity flavors pair beautifully with the richness of cheesecake.
Coconut Macaroons: Serve as a side treat. The coconut in the ambrosia and the macaroons complement each other, keeping with the tropical vibe.
Mint Garnish: Add fresh mint leaves as a garnish. This not only adds to the presentation but also introduces a refreshing element that brightens the flavor of the dish.
beverage pairings
Wine Pairings
Moscato: This sweet, fruity wine is a natural match for ambrosia. Its peach and orange notes will complement the fruitiness in the dish. Look for something lightly sparkling for a refreshing twist.
Sauvignon Blanc: A Sauvignon Blanc with zesty acidity can really uplift the creamy yogurt and fruits in this ambrosia. Try one that has citrus notes, as they pair well with the pineapple and oranges.
Vin Santo: This sweet Italian dessert wine might just steal the show here. Its nutty, honeyed flavor can harmonize with the pecans while balancing the sweetness of the dish.
Other Alcohol Pairings
Pineapple Cider: In the fruity theme, a chilled pineapple cider could be a fun pairing. The sweetness and acidity mirror those of the ambrosia.
Light Beer: A light lager or wheat beer focuses on being refreshing and won't compete with the sweet, tropical flavors of ambrosia. Aim for something crisp and clean.
Mocha Cocktail: How about a mocha cocktail? The dark coffee and chocolate notes can add a surprising loft to the sweetness of ambrosia. Look for one that's not overly sweet for balance.
Non-Alcoholic Pairings
Coconut Water: This choice enhances the coconut flakes with a subtle, refreshing flavor. It offers hydration and works great to bring out the tropical vibe of the dish.
Fruit Punch: A lively fruit punch could pair wonderfully. Opt for one with a mix of citrus fruits that highlights the ambrosia's sweetness.
Cinnamon-Infused Iced Milk: This could bring out the creamy profile of the yogurt while adding a cool, smooth note alongside the richly fruity textures. Just a sprinkle of cinnamon gives it a fun twist!

Great recipe. I used Dannon Light and Fit Vanilla yogurt as a healthy choice. Also, I added 1/2 cup maraschino cherries, quartered. Pretty addition to the salad. Very tasty!
