Crispy, crusted chops covered in a homestyle onion gravy put ordinary pork chops to shame.
4 pork chops
seasoned salt and pepper as needed
2 cups vegetable oil
1 cup all-purpose flour
1/2 onion, finely chopped
1 cup water or broth
Season the pork chops with salt and pepper.
Place the flour in a shallow dish and season it with salt and pepper. Dredge the pork chops in the seasoned flour mixture and set aside.
Heat the oil in a deep skillet over medium-high heat. Add the pork chops to the pan and cook until well browned on each side.
Remove the pork from the skillet and set aside. Remove all but 1 tablespoon of the oil from the skillet.
Add 1 tablespoon of the seasoned flour mixture to the skillet and stir to mix well. Cook, stirring constantly, until the flour starts to brown.
Add the onions to the skillet. Mix well. While stirring, slowly add the water. Bring the gravy to a boil then reduce the heat to a simmer.
Return the pork chops to the skillet. Let simmer for 20-25 minutes, turning the chops occasionally.
Cover the skillet and remove the pan from the heat. Let stand for 5 minutes then serve the pork chops with the gravy.

We love these pork chops. It's a no-fail recipe too. If you haven't tried making smothered chops before follow this recipe and you'll have great results. I also use broth instead of water with the onions but I use a rich beef stock so it gets them really flavorful.

This was really good!! I only changed one thing, instead of the water, I added chicken stock- wonderful flavor!!
