Colorado means "colored red" in Spanish. You often see the term chile colorado in cooking which essentially means a spicy red sauce, and has nothing really to do with the state of Colorado. Because of its high elevation, water boils at a lower temperature and baked goods rise faster which makes cooking a challenge
The state, however, is known for some foods. Most notably is the Denver omelet or sandwich (also known as a western omelet). It was created by Chinese cooks working on the railroad who put egg fu yung between bread and served it as a sandwich. The omelet (or sandwich) consists of egg, green bell peppers, onions, and ham.
