Bailey's Irish Cream Balls

ingredients
3 cups vanilla wafer cookies, finely crushed
1 cup pecans, chopped
3/4 cup powdered sugar
1/2 cup Bailey's Irish cream
3 tablespoons light corn syrup
1 1/2 teaspoon unsweetened cocoa powder
directions
Combine all ingredients in a bowl and mix with a wooden spoon until well blended. Allow to stand 5 minutes. Shape mixture into 1-inch balls. Roll balls in powdered sugar. Allow to dry on wire rack 1 hour. Roll in powdered sugar again if desired. Store in airtight container between layers of wax paper.

I was amazed at how yummy these were. I've made a few batches of bourbon balls, chocolate orange balls, etc., and I'm amazed at all the variation in measurements and yield. This one was right on, except I did up the cocoa to 1 TBSP because I couldn't taste the chocolate otherwise. I also added a dash of salt to bring out the sweet. It was just the right texture, wasn't messy on my fingers as I was forming the balls either, perhaps because of the liqueur. I poured confectioners sugar into a paper plate, placed 4 balls at a time, and gently shook the plate to coat them - much faster that way. I got exactly 48 balls from this recipe.
