Mexican Dessert Tortillas with Ice Cream

honey

Melt butter in a skillet over low or medium low heat. I have a gas stove, so the lowest setting is quite enough! When skillet is hot, place a flour tortilla on the butter.
Using a fork or a spatula, move the tortilla about the skillet to prevent sticking Be careful to not tear it if using a fork. Flip occasionally for even cooking on both sides. The tortilla is done when air pockets start to puff upwards and the surface is browning, but not browned.
Place the tortilla on a plate. You don't have to be as careful, it's nice and crispy now, and won't tear. Drizzle with honey, top with a scoop of vanilla ice cream and cinnamon.
I imagine that, if serving this at a dinner for one's family, one could make all the fried tortillas at once using a large electric skillet, or something similar.
