Pumpkins aren't just for pies or Halloween decorations. These large, orange gourds - while naturally sweet - also work well in savory dishes. They pair well with poultry and pork (and especially bacon) and their creamy-when-cooked texture blends easily into soups.

I used white bread because that was what I had (and my kids are kinda picky about wheat bread). I doubled the recipe because two slices of bread for two people didn't really seem like a breakfast (I was serving it to my two daughters ages 9 and 12). They really enjoyed it. The peanut butter honey sauce was delicious too!
