Strawberry-Chevre Salad

ingredients
1 tablespoon raspberry vinegar
1/2 teaspoon Dijon mustard
1 1/2 teaspoon chopped fresh tarragon or chives
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
3 tablespoons extra-virgin olive oil
6 cups mixed salad greens
1/2 cup sliced sweet onions
1 cup sliced strawberries
1/3 cup crumbled soft goat cheese
2 tablespoons slivered almonds
directions
In a small bowl, whisk together vinegar, mustard, tarragon, salt and pepper. Slowly whisk in oil until blended.
In a large bowl, toss lettuce and onions with enough vinaigrette to lightly coat.
Divide lettuce among salad plates. Sprinkle with strawberries, goat cheese and almonds.
