- #62389

1-2 hrs
ingredients
2 sticks butter, softened
1 1/2 cup sugar
3 eggs, beaten
3 cups flour
2 teaspoons ground cinnamon
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup buttermilk
1 1/2 cup blackberry jam
1/2 cup chopped walnuts or pecans
Cream Cheese Frosting
1 package (8 ounce size) cream cheese, softened
1/3 cup softened butter
2 teaspoons vanilla extract
3 cups powdered sugar
directions
Heat oven to 350 degrees F.
Beat butter and sugar in bowl of electric mixer until well mixed. Add eggs, one at a time, beating well after each addition.
Stir together flour, cinnamon, baking soda, salt, cloves, nutmeg and ginger in medium bowl.
Alternately add flour mixture and buttermilk to butter mixture, beating well after each addition, beginning and ending with flour. Beat in jam. Stir in nuts by hand.
Pour batter evenly into three greased and floured 9" round cake pans. Bake until wooden pick inserted in center comes out clean, about 35 minutes. Cool 10 minutes in pans; turn out onto wire racks. Cool completely.
For Cream Cheese Frosting: Beat together cream cheese and butter on high speed until light and fluffy, about 2 minutes.
Beat in vanilla extract. Add powdered sugar; beat on low speed until incorporated. Increase speed to high and beat until smooth, 1 to 2 minutes.
Add more powdered sugar if frosting is too thin or a dash of milk if too thick.

What's the secret ingredient in these cakes? Pudding mix. It not only adds flavor but it gives the cake a richer, creamier texture. No one will know your secret ingredient!
