2 packages (10 ounce size) frozen chopped spinach
1 tablespoon dried minced onion
3 tablespoons butter or margarine
1 cup herb-seasoned stuffing mix
1 cup grated Parmesan cheese
2 beaten eggs

directions

In a saucepan cook the spinach and dried onion according to spinach package directions. Drain well.

In a mixing bowl stir together hot spinach mixture and butter or margarine till butter melts. Add stuffing mix and cheese. Stir in eggs.

Shape into 1-inch balls. (If desired, place spinach balls in a shallow pan.)

To freeze: Cover and freeze about 1 hour or till firm. Transfer spinach balls to freezer container. Seal, label, and freeze up to 4 months.

To Cook: Place unfrozen spinach balls on a greased baking sheet. Bake in a 375 degrees F oven about 7 minutes or till heated through. (Or place frozen spinach balls in a shallow baking pan. Bake at 375 degrees F for 15 to 20 minutes or till heated through).

To make handling the mixture easier, drop small mounds onto a baking sheet lined with waxed paper. Freeze about 10 minutes, then shape the mounds into balls.

    I've tried a couple of other spinach nugget recipes for my kids. This one is by far the best. I substituted the seasoned breadbrumbs with whole wheat panko breadcrumbs and added some garlic powder and sea salt. They came out great and my kids love them. Thanks for the good recipe!

    I've made these little gems for years. You can also add about 1 1/2 cups turkey ham diced which makes them extra yummy.
