Not to be confused with evaporated milk, sweetened condensed milk is very sweet (and very sticky) and used primarily in desserts.

What are you looking for in a cookie? A chewy, soft, or crunchy bite? If you prefer the last two options then these crunchy oatmeal raisin cookies will be your new favorite snack. These cookies have the added ingredients of brown sugar and honey to give them that extra oomph.

1/2 cup packed brown sugar
1/4 cup honey
1/4 cup margarine, at room temperature
2 large egg whites
1/4 cup skim milk
1/2 cup uncooked oat bran
1/2 cup all-purpose flour
1 teaspoon vanilla extract
3/4 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup old fashioned oats
1 cup raisins
Preheat the oven to 350 degrees F. Line a baking sheet with foil.
In a bowl, combine the brown sugar, honey, and margarine. Beat on medium speed with an electric mixer until combined.
Add the egg whites and mix until combined.
Add the milk, oat bran, flour, vanilla, cinnamon baking soda, and salt. Mix well on low speed.
Stir the oats and raisins in by hand.
Drop the cookie dough by rounded tablespoonfuls onto the foil lined baking sheet, about 2 inches apart.
Place the baking sheet in the oven and bake at 350 degrees F for 15 minutes or until the cookies are browned and the tops spring back when lightly pressed.
Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes then transfer to a wire rack to cool completely.
Store the crunchy oatmeal raising cookies in an airtight container.
