ingredients
2/3 cup butter-flavored shortening
1 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup finely chopped peeled tart green apple
3/4 cup chopped walnuts
directions
Preheat oven to 375 degrees F. Lightly grease cookie sheets and set aside.
In a medium bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together shortening and sugar with an electric mixer set on medium. Beat in egg and vanilla extract. Mix in half of flour mixture.
Stir in chopped apple, and walnuts. Stir in remaining flour mixture until just combined.
Drop by heaping teaspoonfuls onto prepared cookie sheets 3 inches apart. Bake for 13-15 minutes or until golden brown. Remove cookies immediately and transfer to cooling surface.
