ingredients
1 large ripe banana
1 tablespoon sugar
1 cup heavy cream, whipped to stiff peaks
fresh mint sprigs
directions
In food processor combine banana and sugar and puree. Scrape puree into a bowl and gently fold in whipped cream. Cover and chill 1 to 2 hours.
To serve, mound mousse in centers of individual dessert plates. Garnish with mint.

I wanted a treat without having to bake anything or wait a long time. I changed this to a single serving but used a small ripe banana and about half a cup of cream and 1/2 tsp sugar. I also didn't chill it, just ate it once folded together.

SOOOO DELICIOUS! But I pureed the banana and sugar before I whipped the cream, keeping the cream in the freezer for as long as possible, as that makes it easier to whip. I also served it piped with a star tip in chocolate cups (mini cupcake wrappers that I painted with melted chocolate and then froze/refridgerated) and the pairing was absolutely delicious!
