It may look like a sad little package shoved in the back of your freezer, but frozen spinach actually has a lot of culinary uses (and some may surprise you).
Spongy Chocolate Fudge Pudding

ingredients
PUDDING
4 pinches butter
4 ounces caster sugar
2 medium eggs
3 ounces self-rising flour
2 tablespoons cocoa powder
1/2 teaspoon vanilla essence
1 tablespoon milk (or more as needed)
SAUCE
4 ounces brown sugar (soft)
2 tablespoons cocoa powder
1/2 pint boiling water
directions
Set oven to 375 degrees F.
Place all the pudding ingredients into a bowl and beat well to a soft consistency or use a food processor. Put into a 2-1/2 pint ovenproof dish.
Make the sauce by combining the sugar and cocoa in a bowl and adding the hot water. Mix well.
Pour this sauce over the pudding mixture. Bake for 40 minutes.
Turn out the pudding and a thick chocolate sauce will have formed, coating the light sponge pudding. It is delicious served with thick cream.
