1/4 cup fine, soft white breadcrumbs 1 tablespoon gelatin 1 tablespoon water or white wine 1 cup crab meat 1/2 cup low fat yogurt 2 tablespoons mayonnaise 1/2 lemon, juice and rind of 1 tablespoon snipped chives
Place breadcrumbs in a bowl. Soften gelatin in water or wine, then dissolve over boiling water. Add to breadcrumbs, mixing well; cool.
Pick over crab meat and discard any hard tissue. Beat yogurt and mayonnaise with breadcrumb mixture until smooth. Add remaining ingredients, mix thoroughly, season to taste.
